What is something unique about Chef Elmer Guzman's Island Cuisine?

We strive to buy local whenever we can and have even partnered with Mari's Garden in Mililani for an "Adopt a Farm" program where we have committed to source 70% or more of our produce needs for our restaurants and catering needs.

Where does the inspiration for each dish come from?
Chef Elmer: While best known for my seafood and poke, I draw my inspiration from my diverse culinary background when creating dishes for our catering menu. I was born and raised in Hawaii so I love to put a sophisticated twist on local favorites. I have also been very fortunate to have worked with renowned chefs like Emeril Lagasse, Alan Wong, and Sam Choy so I like to fuse their culinary styles with my point of view.

What is one thing you really want brides and grooms to know about Chef Elmer Guzman's Island Cuisine?
We are very flexible and enjoy creating fun and innovative menus. We love working with clients that think outside of the box and want to incorporate unique items in their menu like a "Hot Cocoa & Smores Bar," "Taco Station," "Build your own Loco Moco," or any other item that a couple suggests, we can make it happen.

Do you have any specialty dishes? What are they?
There are so many popular items but I think our specialty dishes include:
Furikake Salmon Poke (featured on "Diners, Drive Ins & Dives" on the FoodNetwork).
Parfaitini - layers of Sushi Rice, smashed avocado, Spicy Ahi, topped with Tobiko & Kaiware Sprouts.
All of our House Smoked items - Smoked meat, Smoked Tako, Keawe Smoked Snapper, Char Siu Bacon.

Where are you located? Do you have a store location that we can purchase food at or do samplings?
Chef Elmer Guzman's Island Cuisine is the catering division of Poke Stop. We have two Poke Stop locations, one in the Waipahu Town Center and the other location in Mililani Mauka. We have a wide variety of poke, plate lunches, and burgers at our locations but we schedule tastings for catered events at our Mililani Mauka location. Check out our sampling tour HERE.
